February 15th HBin5 Bread Braid Part II


Red Beet Buns
Substitutions:
1 c WWW (white whole wheat) instead of 2 c WW
3 c AP (all purpose flour) instead of 2 cups AP
1 ½ tbsp kosher salt instead of 1 tbsp kosher salt

Sadly, this is one recipe I WON’T make again.  This is the ONLY recipe I haven’t liked so far in the HBin5 book.  And I can’t really say why it is not good.  I followed the recipe and was really looking forward to the flavor of the beets as a matter of fact as I love them!  But ick! 





I purposely made the buns flatter as I was anticipating using them for sandwich buns.  Sitting on top of the buns is the small loaf of bread I made with the rest of the dough.  

I was very  surprised that I didn’t like the buns as I had made a Red Beet and Chocolate cake from the leftover shredded beets and it came out delicious!  

I’m wondering if the main difference is that the beets were cooked for the Red Beet Chocolate cake and not for the Buns.  And Ken’s reaction was VERY negative to the buns!  Sigh, alas, alack!

  1. I was popping the buns into the oven when J. came home from work and he said he wasn't going to eat them. I'm pretty sure it was the bright pink color. But once he tasted the Beet Buns he loved them. Tasted like a good onion bread to me with no beet flavor at all.

    Loved your Beet Cake though, I might have to give it a try!

  3. I just got an onion taste from the buns too, couldn't really taste the beets, but we thought they made great sandwiches.

  4. I skipped this recipe. Try the sweet potato spelt bread. But it doesn't look like yours rose, either.

  5. I'm so sorry you didn't like the buns! I think I loved them because I'm not such a fan of beets, and they didn't really taste like beets. But to each his own. At least now you know!

  6. Beet cake. I have heard that they are really good, but never attempted one. I might have to try that too. Thanks for the good ideas.

  7. We actually had a great reaction to the buns and we could taste our beets and the onion. It might be an acquired taste.

  8. bummer that it didn't work out! the one thing i didn't like about these rolls is that they made my frigde smell narly! your chocolate bread turned out beautifully though!

  9. I wasn't a fan of the beet buns either but I assumed it's because I don't like beets. haha!! I wonder how much of a difference it would make if the beets were cooked.

  13. They certainly look pretty anyway! My husband doesn't like beets so I didn't even attempt them. I'm hoping over to see your beet cake recipe!
